These have to be like the best raw cookies ever. I'm proud to present Mom's chocolate mint cookies! :o) These were invented during our 100% raw years, and were sooo yummy they've carried over the years and are still thoroughly enjoyed. Give 'em a go!

The recipe summed up:
Sprouted Buckwheat Crust
1 cup sprouted and dehydrated buckwheat
1/2 cup mixed nuts or nuts of preference.. sunflower seeds could substitute or be added, also
1 tsp. salt, approx.
1/2 cup coconut
1/2 - 1 cup of dates (as needed until sticky)
Finely blend the buckwheat and nuts (our food processor doesn't cut it for either of those.. we use the blender to get a nice meal). Combine with salt and coconut in a food processor, and add dates until sticky.
Press firmly into pan.
Chocolate Mint Frosting:
1 cup butter (best if fresh and raw!) (If you're vegan, you could substitute for butter with coconut oil or cocoa butter)
1/2 cup honey
1/2 cup cocoa (we use raw cocoa.. mmm!!)
Splash of vanilla
Few drops peppermint oil
Blend butter and honey until creamy; add remaining 3 ingredients and process until smooth. Spread over crust.
Chill cookies until frosting is set, then slice 'em up and be prepared to make more when the pan empties ;o)!
Also, the kids take these already-rich and perfectly yummy cookies and spread peanut butter on top to make a treat that's almost sinful.. we call 'em our 'Reeses Peanut Butter Cups' ;o)! Ooh, and a glass of raw milk tops off that heavenly snack. Trust me, it'll be on your mind for the rest of the day. It really is wonderful to have a healthy and nutritious dessert that is so completely satisfying and delicious.. thanks, Mom--you're a genius! ;o)
